Baklava Bites (No Bake!)

Baklava is one of my favorite treats ever, so I decided I had to come up with an easier and healthier version, and these paleo baklava bites were the result!  There are really not too many ingredients, especially if you leave out the dough, and then you don’t even need to bake them!!  They are super-duper easy to make!

Paleo, raw vegan baklava balls



  • 1/2 cup walnuts
  • 1/2 cup pistachios shelled
  • 1 tbsp. butter, melted
  • 2 tbsp. honey
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla
  • a tiny bit of lemon zest (about 1/4 tsp.)
  • pinch of salt if nuts were both unsalted



  1. Put all the nuts, cinnamon and lemon zest into a food processor and pulse until powdery but still slightly chunky.
  2. In a separate bowl mix butter, honey and vanilla.
  3. Mix dry and wet ingredients together and form into little balls.  Set on parchment paper and put in fridge for at least 20 minutes to set.

    Can you tell me about how large of a ball you rolled these to? Does about 1″ sound right? How many do you get in a batch? And have you tried to keep them in the fridge for a treat for a few days? Thanks!

      Great questions! I rolled them slightly bigger than 1 inch, probably about 1 1/2 inches, but you really can roll them whatever size you want! Mine didn’t stay in the fridge for long because we ate them up quick, but based on the ingredients, I think they should stay good for at least a week or so.

    I added 1/2 cup of almond to the recipe and increased other ingredients by a bit. I also used a bit of rose water. OMG, they are to die for! So delicious. Thank you for posting.
